In April 2025, the first anniversary event was held at the restaurant "sanZi" in Kagurazaka, Tokyo.

The theme of the restaurant is craft beer and spiced food, and this time, hojicha craft beer and sparkling tea (non-alcoholic) were released as original drinks.

Apoptosis provided support in the selection of tea leaves for the craft beer and the sparkling tea.

Gentle hojicha craft beer that brings out the best of the spice

This time, we used hojicha leaves from Hidai Hidai Seicha in Fukuroi City, Shizuoka Prefecture.

The combination of hojicha leaves and Japanese pepper gives this hojicha ale a gentle, refreshing, and cool taste.

In the development process, we tried a variety of hojicha leaves, but in the end, we chose Hidai Seicha, which is known for its traditional charcoal roasting method by craftsmen.

The deciding factor was the richness, sweetness, and roasted flavor that would not lose out to the beer flavor.

We are very happy to have created a unique beer to commemorate our first anniversary at sanZi, a Japanese craft-themed restaurant.

It is a perfect match for the curry, roulouhan, and other spicy dishes that we enjoy at sanZi.

Original sparkling tea with aroma and margins

The sparkling tea we served with the craft beer was an original label named "Kareki Seiyo".

The name "Kareki Seiyo" comes from the episode of the birth of hojicha (roasted tea leaves), in which a large amount of tea stems were thrown away because they were no longer useful, but were roasted and sold.

Using hojicha leaves from Shizuoka City, Shizuoka Prefecture, theflavor is maximized through roasting and extraction, and bottled with the added freshness of bubbles.

The gentle sweetness that spreads in the mouth and the moderate bitterness in the aftertaste are pleasant and refreshing.

The mild aroma and richness go well with dishes using spices such as sansho (pepper) and cumin, and also with sanZi's cuisine.
